They do this through the action of a hormone called insulin, which instructs the fat cells in your body to store fat as triglycerides. Because blood sugar is toxic in high levels, insulin is secreted in the presence of elevated blood glucose. Insulin signals your muscle cells to burn glucose instead of the fatty acids they’re built to burn for energy. Consequently, starch and sugar lead directly to fat storage, and an adverse condition that is now known as metabolic syndrome. Drop starch and sugar, and you’ll drop fat, too.
